I purposely bought this sharpener that grinds the finer 15 degree edge for all of my knives.
It takes a bit of time to initially change the existing 25 degree edge on some knives but after you are done using this sharpener you will have the sharpest kitchen knife you ever used.

I purchased this santoku sharpener at Amazon and have been very satisfied with it's performance.
